羧甲基淀粉（CMS）是变性淀粉的代产品，属醚类淀粉，是一种水溶性阴离子高分子型化合物。无臭、无味、无毒、热易吸潮。溶于水形成胶状溶液，对光、热稳定。不溶于乙醇、乙醚、氯仿等有机溶剂。具有增稠、悬浮、分散、乳化、粘结、保水、保护胶体等多种性能。可作为乳化剂、增稠剂、分散剂、稳定剂、上浆剂、成膜剂、保水剂等。
Carboxy methyl starch(CMS)is was modified starch of alternative products, is the ether class starch,is a kind of water-soluble anionic polymer compound. non-toxic,tasteless,hot easy absorption moisture. Dissolve in water into colloidal solution,to light, thermally stable.Does not dissolve in the ethyl alcohol, the ether, the chloroform and so on organic solvent.Contains increase viscosity, suspension, scattered,the emulsification,adhesion,to protect the water, the protective colloid and so on many kinds of performance. May as the emulsifier,the thickening agent, dispersing agent,the stabilizer,sizing agent, film-former,water retention agent and so on.
